Tea is not an afterthought
In a Chinese dining room the pot lands before anything else and stays on the table until you leave. Ours is loose leaf, brewed properly, and topped up as often as you like without anybody asking you to pay again.
Jasmine is our house pot and suits almost everything. Pu-erh, aged and earthy, is the one to ask for after a rich meal — it genuinely does settle things. Chrysanthemum is caffeine free, which makes it the right choice for a late table or for children.
